Lemon Pepper Tilapia


I don't know about cooking fish sometimes but this week I made Lemon Pepper Tilapia. Seasoned with lemon and cooked in an oven safe bowl for about 25 minutes and it was done. This time I put the vegetables and the fish in the same bowl and cooked them together covered with a tablespoon of olive oil. This made the vegetables come out a little bit dry. I think next time I try this I'm going to cover it with foil and see if that traps some of the moisture. Over all this was a delicious meal. The fish had just enough lemon and remained moist despite the vegetables being a little bit dry. To spice up the vegetables a bit I used Chipolte Tabasco Sauce and it went perfectly. I'm a big fan of asparagus and yellow squash, and even though I love it I think I need to change it up. We'll see what else i can come up with. Until next time!

Let me explain some things.

So, since I have been doing this blog a bit I want to let you people know what it's all about. In an effort to make myself more healthy I have been dieting and trying to eat right. So far I have been successful, thanks to the guidance of a few people and a bit of will power of my own. So the purpose of this blog is to show my friends the kind of meals I have been preparing for myself. Also I would like for other people to make suggestions to me or try out what I have and let me know how they may have changed it up.

That means I want YOU people to make this stuff and tell me what would make it better. After all, I could always use the help.

Shrimp and Cabbage Tacos


So, a few weeks ago my girlfriend being the awesome person that she is came over and made me some dinner! This was all her idea so I have to give her the credit. But I felt I should blog it because it's a great idea and a really good meal. Fry some shrimp in olive oil and whatever seasoning you happen to like. I think it was mesquite seasoning that we used. After your shrimp is cooked put them in a leaf of cabbage with your favorite salsa or you can just enjoy it plain. I had mine plain and they were good. I also want to add that this meal was very filling. I made myself 5 tacos and hard a hard time finishing them. The only complaint that I had was that the cabbage is a little too crunchy for my taste to eat raw. Maybe I will try steaming it for a really short time before i eat it. Or I was thinking that I could use a few leaves of cabbage and try rolling it into a burrito. Until next time!

Pacific Red Snapper

My first time cooking Pacific Red Snapper I decided to bake it. I put it in an oven safe bowl with half of a lemon(squeezed), a clove of garlic minced, and 1 tablespoon of olive oil and pepper to taste. Put it in the oven on 400 and in about 15 minutes the fish will be done. This smelled amazing while it was cooking, made me excited for it to be done. The fish wasn't a let down at all. Pacific Red Snapper is wonderful tasting and has a great texture. One of the most flaky cuts of fish that I have had to date. I steamed yellow squash and cabbage to go with it. This is the first time I've steamed cabbage and since I don't eat butter it wasn't anything special. Really bland actually. But the squash has a great flavor and it is now something that I eat almost daily. Great meal!

This was chicken marinated in Trader Joe's brand Soyaki for about 2 hours. I cooked it in a frying pan and threw in some broccoli and asparagus to go with it. The selection of greens absorbed the Soyaki flavor so well. Cooked with low heat and covered for about 15 minutes. Try it!
